WHAT IS WAGYU?

Once reserved for the courts of Japanese Royalty and Samurai, Wagyu has a fabled history of being the world’s finest beef. Today, it is the first choice of fine chefs around the world and is a staple of the American fine dining experience. Its reputation and excellence stems from the agricultural communities of ancient Japan, where a specific breed of cattle developed high intramuscular fat content. This unique fat/muscle balance results in perfectly marbled cuts of beef with a superior taste and tenderness. In fact, pureblooded Wagyu beef has such exceptional features that it exceeds the USDAs prime beef grading scale, two to five times over. So in short, Wagyu beef is one of the finest meats in the world. Yet, since its arrival to America in the mid 70s, only a few select farms have maintained the highest standards of Wagyu quality. According to the AWA (The American Wagyu Association), of the more than 30,000 cattle identified as Wagyu in the US, only around 4,000 are pureblooded. A HEALTHY ALTERNATIVE?

No, we don’t mean something made from flowers and beans. Apart from its flavor, Wagyu is the healthiest beef on the market. The high fat content in its marbled cuts is monounsaturated, like that found in nuts and plant based oils, allowing it to melt easily and to saturate the meat to juicy perfection without the high levels of trans-fatty acids found in other red meats. In way of health benefits, Wagyu beef can be compared to eating fish, as it contains around half of the cholesterol found in chicken and is packed with healthy oils, like Omega 3 and 6, and oleic acid (which is linked to better heart health and reduced risk of serious disease). Additionally, Wagyu contains polyunsaturated fats, like CLA (or Conjugated Linoleic Acid), a known aid in weight-loss and regulation, lowering your risk of diseases like diabetes. As an AWA certified family farm, we grass-feed our free-to-roam cattle, keeping them happy and healthy, without any hormones, steroids, or other nonsense you wouldn’t want in your beef.
